Pain de Campagne
 
150gr wholemeal strong flour
150gr white strong flour
6gr salt
170-180gr water at 24 c maximum
7gr dry yeast
Country Bread
1.Preheat oven to 230C (450F/Gas Mark 8).
2.In a bowl mix flour and salt.
3.In a different bowl mix the yeast and water.
4.Add water in the flour bowl and mix to form a soft dough,then knead for 10 minutes on a floured surface.
5.Cover and leave to rise for 30 minutes,or until dough has doubled in size.
6.Knead again but only gently and to give it a stronger texture, shape into a ball.
7.Place the ball on grease-proof paper, cover and leave to rise again for 20 minutes.
8.Put some flour on the top with the sieve and with a knife, gently cut a cross pattern. (Not too deep, not too lightly)
9.Place in the center of the oven.Bake for 35-40 minutes
10.Remove from oven and cool on a wire tray.
For best results, keep everything away from wind or open doors, windows.
*the room temperature should be around 24 degrees and should not exeed 28 degrees.
